Pesto alla genovese | classic basil pesto

So very fresh and so very green!

serves 6

Ingredients 

2 handfulls of fresh basil

1 handfull of finely grated parmesan

1 handfull of lightly roasted pine nuts

3 tablespoons of olive oil

freshly ground black pepper

a squeeze of lemon juice

Method 

  1. Bash the garlic in a pestle and mortar with the black pepper.
  2. Add the basil (with stems) and pine nuts, pound to a coarse paste.
  3. Drizzle in the olive oil, then stir in the parmesan.
  4.  Add a squeeze of lemon juice to give a little twang.
  5. Store in a jar in the fridge.
