So very fresh and so very green!
2 handfulls of fresh basil
1 handfull of finely grated parmesan
1 handfull of lightly roasted pine nuts
3 tablespoons of olive oil
freshly ground black pepper
a squeeze of lemon juice
- Bash the garlic in a pestle and mortar with the black pepper.
- Add the basil (with stems) and pine nuts, pound to a coarse paste.
- Drizzle in the olive oil, then stir in the parmesan.
- Add a squeeze of lemon juice to give a little twang.
- Store in a jar in the fridge.
